Who We Are

Fifteen years in hospo.
One obsession.

We are not chefs.

We are a group of good mates who have been in hospitality for fifteen years. We have opened venues, closed venues, and eaten a lot of bánh mì in between.

A lot.

We go to Vietnam every chance we get. We eat bánh mì for breakfast there. Sometimes lunch. Honestly, sometimes dinner too. We are not ashamed.

Sydney has incredible bánh mì. But we think it can do better. We think there is a spot in this city that does not exist yet. The right bread. The right pâté. The right corner. Somewhere you walk past on a Tuesday and end up late to work because the queue was worth it.

For years we have been watching. Learning. Testing. Eating our way through Vietnam and back. We know what great looks like. We know what it tastes like. And we know exactly what we are building.

Now we are looking for our first location.

We are not telling you where yet. But when we find it, you will know. While we look, we make shirts. Shirts about bánh mì, bad puns, and the kind of food that makes you stop mid-bite and close your eyes. We are building the crowd before we build the shop. Because when we open, we want the right people through the door first.
